Zucchini and Cauliflower Skewers

Ingredients
  

  • 4 large zucchini and/or summer squash
  • 1 head cauliflower, cut into florets
  • Garlic infused extra virgin olive oil
  • Pink salt and pepper, to taste
  • 8 skewers, soaked in water for 20 mins

Instructions
 

  • Preheat grill to medium-high heat.
  • Shave zucchini and yellow squash into long strips or chop into half moons.
  • Skewer the zucchini, squash, and cauliflower florets.
  • Drizzle with olive oil and season with salt and pepper.
  • Grill, turning occasionally until vegetables are tender, 10-12 mins.
  • Serve warm with your favorite protein of choice.
