Vegetable Frittata

Ingredients
  

  • 8 eggs
  • 1 small zucchini, diced
  • 1 cup raw spinach
  • 2 garlic cloves, finely chopped
  • ¼ cup scallions, chopped
  • ½ cup mushrooms, sliced
  • 1 cup bell peppers, chopped
  • 1 Tbsp olive oil
  • Pink salt
  • Pepper

Instructions
 

  • Preheat oven to 350°F.
  • In a skillet, heat oil and sauté garlic, zucchini, and mushrooms.
  • Once slightly browned, add spinach; sauté until spinach shrinks by half and wilts.
  • In a large glass bowl whisk eggs.
  • Add salt and pepper, to taste.
  • Pour egg mixture over vegetables into a well greased glass baking dish.
  • Bake for approximately 20 minutes or until the center is set.

Notes

Optional: Top with jalapeño peppers to add a little heat!
