Vegetable Frittata
Ingredients
- 8 eggs
- 1 small zucchini, diced
- 1 cup raw spinach
- 2 garlic cloves, finely chopped
- ¼ cup scallions, chopped
- ½ cup mushrooms, sliced
- 1 cup bell peppers, chopped
- 1 Tbsp olive oil
- Pink salt
- Pepper
Instructions
- Preheat oven to 350°F.
- In a skillet, heat oil and sauté garlic, zucchini, and mushrooms.
- Once slightly browned, add spinach; sauté until spinach shrinks by half and wilts.
- In a large glass bowl whisk eggs.
- Add salt and pepper, to taste.
- Pour egg mixture over vegetables into a well greased glass baking dish.
- Bake for approximately 20 minutes or until the center is set.
Notes
Optional: Top with jalapeño peppers to add a little heat!
