Sautéed Snow Peas with Lemon and Parsley

Ingredients
  

  • 1 Tbsp olive oil
  • 1 scallion, minced
  • 1 tsp lemon juice 
  • Pink salt, to taste
  • Ground pepper, to taste
  • 4 cups snow peas, tips pulled off and strings removed
  • 1 Tbsp fresh parsley leaves, minced

Instructions
 

  • Combine 1 tsp oil, scallion, and lemon in small bowl.
  • Combine 1/4 tsp salt and 1/8 tsp pepper to a small bowl. Heat remaining oil in a nonstick skillet over high heat until just smoking. 
  • Add snow peas, sprinkle with salt mixture, and cook, without stirring about 30 seconds.
  • Continue to cook, stirring constantly, until peas are tender.
  • Push peas to side of skillet; add scallion mixture to clearing and cook, mash with spatula, until fragrant, about 30 seconds.
  • Toss to combine scallion mixture with peas.
  • Transfer peas to bowl and stir in lemon juice and parsley.
  • Season with salt and pepper. Enjoy!
