Sautéed Snow Peas with Lemon and Parsley
Ingredients
- 1 Tbsp olive oil
- 1 scallion, minced
- 1 tsp lemon juice
- Pink salt, to taste
- Ground pepper, to taste
- 4 cups snow peas, tips pulled off and strings removed
- 1 Tbsp fresh parsley leaves, minced
Instructions
- Combine 1 tsp oil, scallion, and lemon in small bowl.
- Combine 1/4 tsp salt and 1/8 tsp pepper to a small bowl. Heat remaining oil in a nonstick skillet over high heat until just smoking.
- Add snow peas, sprinkle with salt mixture, and cook, without stirring about 30 seconds.
- Continue to cook, stirring constantly, until peas are tender.
- Push peas to side of skillet; add scallion mixture to clearing and cook, mash with spatula, until fragrant, about 30 seconds.
- Toss to combine scallion mixture with peas.
- Transfer peas to bowl and stir in lemon juice and parsley.
- Season with salt and pepper. Enjoy!
