Balsamic Mock Potatoes and Asparagus



  • 1 rutabaga, cubed
  • 1 celery root, cubed
  • 1 turnip, cubed
  • 1 bunch of asparagus, 2 inch pieces
  • 2 Tbsp garlic infused olive oil
  • 1-2 packets Moxifit Balsamic Dressing
  • Pink salt and pepper, to taste


  • Preheat oven to 400°F.
  • In a large roasting tin, add olive oil, Moxifit balsamic packet and pink salt.
  • Add rutabaga, celery root and turnips, toss to coat fully before roasting for 20 minutes.
  • After 20 minutes, add asparagus with a little extra olive oil if needed.
  • Toss to coat and cook for another 15 minutes.
  • Season with extra Moxifit balsamic packet, pink salt and pepper.
  • Serve and enjoy!
