Balsamic Mock Potatoes and Asparagus
Ingredients
- 1 rutabaga, cubed
- 1 celery root, cubed
- 1 turnip, cubed
- 1 bunch of asparagus, 2 inch pieces
- 2 Tbsp garlic infused olive oil
- 1-2 packets Moxifit Balsamic Dressing
- Pink salt and pepper, to taste
Instructions
- Preheat oven to 400°F.
- In a large roasting tin, add olive oil, Moxifit balsamic packet and pink salt.
- Add rutabaga, celery root and turnips, toss to coat fully before roasting for 20 minutes.
- After 20 minutes, add asparagus with a little extra olive oil if needed.
- Toss to coat and cook for another 15 minutes.
- Season with extra Moxifit balsamic packet, pink salt and pepper.
- Serve and enjoy!
